Watermelon and feta salad

Ingredients

Feta Watermelon Salad

  • 6 cups watermelon, cubed (seeds removed)

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh mint leaves, chopped

  • 2 cups baby arugula

  • 1/4 cup red onion, thinly sliced

For the Lime Dressing:

  • 3 tablespoons freshly squeezed lime juice (about 2 limes)

  • 3 tablespoons extra virgin olive oil

  • 1 teaspoon honey (optional, for added sweetness)

  • 1/4 teaspoon kosher salt

  • 1/4 teaspoon freshly ground black pepper6 cups watermelon, cubed (seeds removed)

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh mint leaves, chopped

  • 2 cups baby arugula

  • 1/4 cup red onion, thinly sliced


Step 1: Prepare the Ingredients

  • Cut the watermelon: Cube the watermelon and remove any seeds.

  • Slice the onion: Thinly slice the red onion and soak it in cold water for 5 minutes to reduce its sharpness, then drain.

Step 2: Make the Lime Dressing

  • Whisk the dressing: In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until emulsified.

Step 3: Assemble the Salad

  • Combine the ingredients: In a large salad bowl, gently toss the watermelon, crumbled feta, arugula, mint, and red onion.

  • Add the dressing: Drizzle the lime dressing over the salad and toss gently to coat evenly.

Step 4: Serve

  • Plate the salad: Transfer the salad to a serving dish.

  • Garnish: Add a few extra mint leaves or a sprinkle of crumbled feta on top for presentation. Serve immediately.
